Creamy Mushroom Risotto *vegan

Here's a risotto recipe you can enjoy without the dairy, but you won't miss any of the flavor! Try it and let me know what you think- Risotto: * 1 Package of Cremini mushrooms * 2 1/2 cups arborio rice (or short grain rice) * 1 red onion minced * 4 cloves of garlic minced * 5 cups of vegetable broth (already hot) * 3 tablespoons Organic Earth Balance * 1 teaspoon dried Thyme * 1/2 teaspoon sage (dried or fresh) * 1 Bay leaf * 1/4 teaspoon crushed Saffron threads * Salt and Pepper to taste * 1/3 Cup of cashew cream (recipe below) * 3 tablespoons fresh parsley to garnish Cashew Cream: * 1/2 cup raw cashews (soaked in boiled water for 30 min.) * Enough boiled water to cover 1 inch above the ca

Zuppa Toscana- Tuscan Soup

INGREDIENTS * 1 lb. Sweet Italian pork or chicken sausage (I always look for natural meat with no additives like nitrates and preservatives) * 1 large onion, diced * 6 slices hickory smoked turkey bacon, diced * 2 medium garlic cloves, minced * 4 cups chicken broth * 2 cups water * 2 cup potatoes, cut into half moon slices * 2 c. kale, thinly sliced * 1 cup cashew cream (see previous Fit Foodie post) * Salt and pepper to taste DIRECTIONS 1. Hot Fudge Slow Cooker Cake

1 package of gluten free brownie mix prepared as directed. I used Cherrybrook Kitchen Fudge Brownie mix Topping: 1/2 cup cane sugar 1/2 cup dark brown sugar 1/4 cup pure cocoa powder 1 1/4 cup hot water Directions: Pour brownie mixture (prepared as directed on the box) into a well- greased slow cooker pot. Mix together the sugars and cocoa powder and sprinkle the dry mixture over the brownie mix (do not stir). Then pour the hot water over this mixture and be sure not to stir this either.
