This recipe is a variation on my power protein pancakes, which are delicious too- but this one is a little fluffier, lighter and even higher protein with a peanut butter flavor… 🤤🤤, sized just for one! It’s the perfect high protein breakfast that’s easy and quick to whip up and satisfies your sweet tooth without the garbage ingredients you’d find in your typical mix or local eatery.
Peanut Butter Chocolate Chip Protein Pancake (serves 1)
Ingredients:
1/3 cup Graziella’s GF Flour Blend
1 scoop vanilla protein (my fave!)
1 scoop (same as protein powder) Powdered Peanut Butter
1/2 Tablespoon psyllium husk powder
1/2 teaspoon baking powder
Pinch of salt
1 banana, mashed
1 egg, beaten
1 tablespoon Ghee or Coconut oil
1/4 cup Hu Chocolate gems or chips

DIRECTIONS: In a medium bowl, mix together the GF blend with the protein powder, peanut butter powder, psyllium husk powder, baking powder and salt until well combined. In a separate bowl, mash the banana until smooth, then beat in the egg and ghee or oil until fluffy. Add the wet mixture to the dry flour bowl and mix well. Heat a cast iron skillet with some ghee and spoon the batter onto the hot pan to form one large pancake. Stud the pancake with HU Chocolate gems. Wait for some bubbles to form but check frequently for readiness to flip. You’re looking for a golden brown color overall. Flip with a spatula and cook until golden brown on the other side. Serve with a small amount of maple syrup or alone as they are perfectly sweetened as is!
