Gluten-Free Biscuits

I’ve always been obsessed with biscuits. When my family and I would drive to Florida during summer vacations, we would always stop on I95 at the southern store-restaurant known as Cracker Barrel. As a first generation, Italian-Polish American living in New Jersey, I was never exposed to southern cuisine. I tried these fluffy little savory cakes called biscuits slathered with butter, and I was instantly hooked. When I discovered I had a gluten allergy as an adult, biscuits were one of the things I was SO sad about missing. Not that I ate them regularly, but when I did they were always such a treat. I’m thrilled to be able to have them again, gluten -free, full of flavor and fluff minus the bloat and gut issues!🙌


Ingredients
3 TBSP Potato Flakes
3 tbsp coconut sugar
1/2 tsp salt
4 tsp baking powder
3/4 cup COLD butter
1 egg
1 1/4 cup coconut milk
1 TBSP Apple cider vinegar
Extra flour for kneading
Instructions
Preheat oven to 425 degrees.
Combine the dry ingredients in a large bowl.
Use a pastry cutter (or fork) to cut cold butter into flour mixture. Don't go too crazy here - you want to see small, pea-sized pieces of butter throughout the dough.
In a seperate bowl, beat the egg, and add in the milk and vinegar. Next, mix the wet ingredients into the dry ingredients just until they are gently combined . The dough will be sticky but don't keep working it. You should be able to see the butter pieces in the dough.
Turn the dough out onto a generously floured surface. Sprinkle some flour on to the top of dough so it won't stick to your fingers and knead until stretchy. If the dough is super sticky just sprinkle on some additional flour until it’s a workable texgure.
Roll out the dough with a rolling pin, or pat it out to 3/4 - 1 inch thickness and cut with a biscuit cutter or glass. I ended up with nine this time but depending on who is snacking on biscuit dough, I can get up to 12 biscuits.
Place the biscuits on a lightly greased baking sheet or parchment lined baking sheet and bake for 10 to 15 minutes or until golden brown on top.
For extra yumminess, brush the tops of the biscuits with melted butter. Enjoy these warm out of the oven with some butter🤤
